Homemade Chicken Pot Pie

This is a classic all in one kind of recipe, a mixture of vegetables, chicken, creamy sauce and pie crust.

I'm sure most of you know about chicken pie, they are sold in fast food restaurants some even make them at home. Its known for that crust and juicy chicken fillings, i'm sure not most of you have heard of the deliciousness that is chicken pot pie but no worries i've got you covered. It's almost a walk in the park assuming you have a store bought pie crust lol, if you don't its fine no need to panic you can make your own. Homemade Pie Crust Recipe is a 'walk in the park' kinda recipe made easily with ingredients usually found in most kitchens. Be sure to use cold water and keep well-wrapped until ready to use.

You'll need:


Filling

1/3 cup butter or margarine
1/3 cup chopped onion(optional)
1/3 cup all-purpose flour
½ teaspoon salt
1/2 teaspoon pepper
1 cup homemade chicken broth  
½ cup milk
2 cups shredded cooked chicken  
2 cups frozen mixed vegetables, thawed 



Crust
2 cups all-purpose flour
1 teaspoon salt *
1/2 cup butter or margarine 
5 tablespoons cold water*
 
Steps
Crust 
Combine flour and salt in medium bowl; cut in butter/margarine with pastry blender or fork until mixture is crumbly. Sprinkle with water; blend until mixture holds together.
Shape dough into ball; place on lightly floured surface. Roll out dough then  ine pie plate with pastry. Turn edge under; crimp as desired.
*This makes two pie crusts
*Add 1 additional tablespoon water as needed
*Skip salt if using salted butter or margarine




Filling

  • Heat oven to high. Make pie crusts first and place in 9 inch pie pan. 
  •   In saucepan, melt butter over medium heat. Add onion (if using); cook 2 minutes, stirring frequently, until translucent . Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.
  •   Stir in chicken and mixed vegetables. Remove from heat.
  • Pour the mixture into crust-lined pan. Top with second crust; seal edges and cut slits in several places in top crust, brush top with egg.


  •     Bake 30 to 40 minutes or until crust is golden brown. Let stand 10 minutes.
  • Serve!
