Spicy pork vegetable curry |
So I was visiting with one of my aunties whose husband is a
pork lover but her and the kids not so much. But still there are always
different parts of pork in their freezer for just one person to consume, so I
decided to help out and raid the freezer. *winks. ;)
Anyway she was so glad to give me some,
which I used in making stew and then some curry which I’ll share with you.
Honestly, one of the reasons I love pork is because of how easy it is to cook,
I mean in 10-15mins its ready soft with all the juices in it. Now back to the
curry, chicken is mostly used for curry I’ll be sharing the recipe soon but I
decided to change it up a lil bit by using pork and also adding some vegetables
for texture, missed the mushrooms though. I hope you enjoy this as much as I

You will need.
Stewed pork
(cubed)
1 tbsp. each
Rajah Hot/Medium curry
3 cloves of
garlic (diced)
1 medium
Onions (diced)
3 Medium
Carrots (quartered chunks)
4 medium
Irish Potatoes (cubed)
5-6 Long
Beans
3tbsp Olive
Oil
1 Stock Cube
Method
1.
Clean the pork, add salt and set aside.
2.
Prepare the vegetables and set aside, including
the garlic and onions.
3.
Heat olive oil in a saucepan, add in the pork
and stir fry until pork is translucent.
4.
Add stock cube and continue stirring.

Allow it to cook for 5mins or until sauce is a
little thick and vegetables are tender yet crunchy stirring occasionally.

Add garlic and onions, stir until onions become
translucent.

Add coconut milk and allow it to simmer for
5mins.

Add vegetables starting with the potatoes.
8.
Allow it to cook for 5mins or until sauce is a
little thick stirring occasionally.
9.
Serve with rice or bread.

Nice.. I would like to know what other kind of beef can be used to prepare this sauce
@souvenirworks thanks for commenting, for this recipe i used pork. However chicken breast is a very good alternative.
