Delicious Fish Stew with Tomato Paste
Hi guys, given the current situation in the country with the
cost of tomatoes, I decided to hook you guys with a foolproof recipe. Best thing
about this recipe is the fact that it’s very affordable it costs less than
#1,000 to make, great right? This recipe is so easy the result is delicious and
you would not be able to tell the difference between this and fresh tomatoes
stew. I used fish but you can use protein you like e.g chicken, beef etc.
Now I know most are skeptical about tomato paste, I
included. Mainly because of that sharp almost acidic taste, this recipe tackles
that issue. Try it out and let me know

So let’s get to business.
You Will Need:
280g Tomato Paste
500g Mackerel Fish
200ml Vegetable Oil
Fresh Pepper
Onions
Garlic
Seasoning cubes
Salt
Curry and other spices
Chicken Stock (optional)
Water
Method:
1.
Gut and clean fish.
2.
Season fish with salt and spice of your choice, I
used Spice Supreme Oriental spice, set aside.
3.
Blend fresh pepper, garlic, onions.
4.
In a bowl mix tomato paste with the pepper blend
and some water.
5.
Heat sauce pan, add vegetable oil, then onions
stir and allow to cook for about 30 seconds.
6.
Add tomato and pepper mix to it, stir and cover
for about 30 mins stirring occasionally, this will eliminate the sharp taste of
the tomato paste
7.
Add seasoning cube, salt, curry spice,stock and
fish. Add more water if it’s too thick.
8.
Allow to cook for another 20 mins.
9.
Serve with rice, yam or whatever you like.
